Salad course:
Cubed beets with mustard lemon agrumoto, beet syrup, blueberries, goat cheese, pickled mustard seed, fresh dill and almonds.
Entrée:
Dry-aged 8 ounce pork chop with mustard and apple compote, braised mustard greens and honey mustard cornbread.
Dessert:
The Colonel’s famous mustard ice cream in a pretzel crust with a dollop of champagne mustard whipped cream.
