Recipe: Maple Pumpkin Muffins

As the leaves start to cross-over to reflect the golden hues of fall, it's the perfect time to treat yourself with some delicious autumn flavors like these maple pumpkin muffins!

Maple Pumpkin Muffins As featured in the Breads, Muffins and Coffee Cakes Section of the Inn the Kitchen Cookbook from Colorado Springs regional B&B's

  • 1 3/4 c. white flour
  • 3 tsp. cinnamon
  • 1/4 tsp. baking powder
  • 1/2 c. pecans, finely chopped
  • 1 tsp. baking soda
  • 2 eggs
  • 1 c. sugar
  • 1/2 c. oil
  • 1/2 tsp. salt
  • 1 c. canned pumpkin
  • 1/2 tsp. nutmeg
  • 1/3 c. water
  • 1/4 tsp. ginger
  • 2. T. maple syrup

Preheat oven to 375 degrees. In medium bowl, combine flour, baking powder, baking soda, sugar, salt, spices and nuts. In large bowl, beat together the eggs, oil, pumpkin, water and maple syrup. Add dry ingredients to wet ingredients and mix until just combined. Spoon into greased muffin tins, 3/4 full and top with chopped pecans, Bake 25 minutes. Yields 12 muffins.
