A Taste of Pikes Peak B&B’s - Recipes from the Blue Spruce Inn

With the holidays approaching nothing sounds more scrumptious than the Inn's Peach Pie or Apple Cake. If you aren't able to make the trip this holiday, dig in with the recipes below.

Peach Pie: 3 large peaches, sliced 2 peaches, mashed 1Cup sugar 3 TBSP corn starch 1/2 Cup water 1/2 TBSP almond extract 2 TBSP butter Mix all ingredients except the three sliced peaches in a saucepan and cook on medium until mixture begins to boil. Remove from heat and add almond extract and butter. Put sliced peaches into a cooked pie shell, pour in cooked mixture. Chill for 2-3 hours, serve with whipped cream or vanilla ice cream.

Shenandoah Valley Apple Cake: 1 Cup cooking oil 2 Cups sugar 3 eggs 1 1/4 tspn vanilla 2 Cups sifted flour 1 tspn salt 1 tspn baking soda 1 tsp cinnamon 3 Cups diced apples (peeled) 1 Cup chopped nuts 1 Tbsp flour Beat oil, sugar, eggs and vanilla in bowl at medium speed. Sift together flour (2 cups), salt, baking soda and cinnamon. Gradually add dry ingredients to egg mixture, beating well after each addition. Stir in apples. Mix walnuts in 1 tbsp of flour, add to batter. Pour batter into greased & floured 13 x 9 x 2 inch baking pan. Glaze: 1/2 Cup butter 1 Cup packed brown sugar 1/4 cup milk Combine butter, brown sugar and milk in sauce pan. cook over medium heat, stirring constantly until mixture boils. Boil 3 minutes, remove from heat and spread immediately on cake. Makes 16 servings - best served warm.
